Call me a cake fiend if you will, but I’m as cake mad as Mr Kipling and I don’t care who knows it!
The only difference being, that compared to Mr Kipling I’m no baker, so I’m much better off being Chief Taster for all my much better baker talented friends.
The problem is, when you’re on a quest to be healthy, indulging in a sweet treat without the guilt is something of a Holy Grail mission. Because if there’s one thing I struggle with when I’m trying to eat healthily, is my ginormous sweet tooth.
I love fruit and veg, but just not as much as cake!
Combine it with the other c drug, (chocolate), and my friends you’ve got a pretty damn good cake with my name written all over it.
Of course the truth is, when you’re trying to lead a healthy lifestyle you can’t eat cake everyday, (I wish).
I’ve tried to find healthy alternatives for so long, but been disappointed to find their either packed with sugar or laidened with ingredients that even google can’t make sense of!
So when I discovered Madeleine Shaw’s Strawberry & Almond Paleo Muffins, I felt as though I’d struck cake gold.
I had tried her raw carrot cake slices before (here), and been highly impressed, so when the recipe for these muffins dropped into my inbox I just knew I had to give them a go. (Ps if you haven’t signed up to her emails, what are you doing? Do it. Do it now!)
As I pretty much eat anything, the true test came when I took them into my just as cake mad office, where it’s not uncommon to find a calorific treat or two often lingering about.
No refined sugar, no trans fats and no gluten….would they taste good enough to replace naughty cake?
Not only did I feel like they were an indulgent treat with my morning brew, but they also passed the taste test from the office feeders, who usually can’t be tamed away from the bad stuff.
I honestly cannot believe just how good they taste, and they were so quick and easy to make, which for an impatient baker like me was a dream!
I would highly recommend giving these a go if you’re after a guilt free treat, and best of all you can have more than one and not feel guilty. I even had one for breakfast with a little Greek yohgurt.
Now I’m going to experiment with adding different fruits, Cherries maybe…oooh and blueberries!
